I love to bake, yet had never made a cheesecake….until now. For our holiday party this year, I was in charge of drinks and baked goods (naturally), and I decided to go with these delightful mini citrus cheesecakes.
I love that the crust is made from vanilla or chocolate wafer cookies, and instead of just straight cream cheese, I got the opportunity to work with marscarpone (another first for me). I glazed a few oranges for the top (I just couldn’t find kumquats at my local market), and I even saved the orange simple syrup for use in my tea.
They were a huge hit and a great foray into the wide world of cheesecakes. I can’t wait to make more!
