Pumpkin Muffins

I always feel torn about what kind of goodies to make this time of the year. In the fall, everything is full of pumpkin, spices, and warm breads. Around Christmas, it’s all peppermint, egg nog, and sugary goodies, and by the time I get to January, I am ready for lemons, lavender, and all sorts of tarts.

But there is something about pumpkin that I just can’t get over, and since I had a can sitting open in the fridge last week, I couldn’t help but pull together these quick muffins.  Using this recipe, I managed to mix them up and pop them in the oven in about 10 minutes.

It was a great warm snack on these super freezing New York mornings!  Any suggestions of what other goodies I can make this time of year?
