The two weeks between February 17th and March 3rd are a time for celebration. Those are the two weeks between two of my dear friends, Kelsi and Paige’s, birthdays. And for the first time since 2004, we are all in the same city to celebrate! So, in addition to delightful dinners, and glasses of bubbly, no birthday would be complete without a delicious cake to celebrate.
Lucky for us, Paige got a stand mixer for Christmas, so we spent a wonderful Saturday afternoon in Brooklyn baking a red velvet cake with cream cheese frosting. We used a recipe for chocolate buttermilk cake that Kelsi remembers from her childhood and easily modified it to be a red velvet cake. The color and taste were super rich, and the cream cheese frosting was perfectly sweetened. What a perfect way to celebrate a birthday!
