Look at me, look at me, I broke the cookie streak! Sure, these creamy lemon crumb bars aren’t much different from cookies, but it was nice to change it up a little bit. We’ve had meyer lemons in our fridge for a couple weeks now, so I decided to find a recipe to use them up.
I’m not much of a pie baker, and cakes are kind of tough to transport (my main baking audience is my coworkers), so I thought these super easy, really quick bars were an awesome option. I already had nearly everything in my house and they took barely any time on my lazy Sunday afternoon. But be warned, they are super sweet, I really don’t think I could even eat more than one!
